I made the cake, filling, and ganache today, to be put together tomorrow for a party. I've made ganache many times in the past. This time there was an abundance of oil floating on the cooling frosting. I spooned off as much as I could but it still acted like an oil slick, so in desperation I added malt powder. I think it's salvaged. And after four hours, the pudding still wasn't set up enough, so I melted a few ounces of chocolate and mixed it in. Now the filling is a brick. I guess I'll thin it out with some milk tomorrow before I attempt to assemble the cake. It's been a long time since I've struggled with with a recipe and I've always relied on KAF to work out. I guess the stars were not in alignment today.
