Hi there, Bill! We haven't tried this recipe using sourdough starter in place of the overnight starter this recipe makes, but you're welcome to experiment! You'll want to use fed (active) sourdough starter and it'll be a 1:1 swap based on weight so you'll need about 10.25 ounces of starter. Happy baking! Morgan@KAF
