I have had this recipe bookmarked for over a year and today I finally found the perfect cold rainy day to use it. I stuck to Alison's recipe and did not add any extra flour to make it easier to handle. After the first stretch and fold I reread the instructions and noticed the "keep your hands wet" tip and things got easier after that. I baked my first loaf in a round Magnalite roaster with about a 10" diameter using the lid on for the first 15 minutes. This is the best loaf of white bread I have ever baked. I put the second loaf in the fridge to bake tomorrow. Until now my best effort was with the original "Joy Of Cooking" French bread recipe. Thank you Alison and thank you King Arthur for making this recipe available.
