Finally, I have reached bread nirvana with this recipe. I take the dough and go through the folding process. Weigh the dough and cut it in half. I will freeze one or even both of the the dough balls until I am ready to use. I let it thaw and rise over night and bake when ready. The results have been amazing. I bake my breads in dutch oven which gives me that super crusty outside and soft inside. I love this recipe!
