Your blog was sent to me two days ago and I just had to try it. Been baking bread all winter in our RV with a convection microwave oven (450 is max) and/or my Zo. I've been doing the dough in the Zo and finishing in the oven. So I went for the challenge of scratch mixing and it was a stunning success.
I used 244 gr of 00 Italian flour plus KA bread flour. My only mistake was not enough flour in the towel so it stuck as I turned it into a parchment lined metal cake pan (all I had on the RV) but still had oven spring. I'll bake my second one today and when I get the towel unstuck, guess I'll try for another rise in the pan before I bake. Wish I could post a gorgeous picture of my results.
