Hi Susan, Sorry to hear about the troubles. Yes, it is most likely your dry weather that is causing your troubles. Flour absorbs moisture from the air, and when it's dry, your flour is dry. Try increasing the amount of liquid in your recipe by up to 1/4 cup. You want your no knead dough to be sticky and wet in order to get those big holes.
