Sourdough will give a different flavor profile than using an overnight starter. 1 cup sourdough = 1 cup flour and 1/2 cup water. Adjust the recipe accordingly removing 1 cup flour and 1/2 cup water from the total amounts. I hope this is helpful - or your might consider the recipes written and tested for sourdough - either the Rustic or Extra Tangy. Happy Baking - Irene@KAF
