I appreciate seeing the running commentary throughout Alison's narrative: it's like being a bystander to a conversation, where I'm picking out things that I can use myself. That appeals to the part of me that tries to reason through the process considered holistically, rather than as a series of discrete steps from which deviation is not desirable. As I read all of it, I considered the various suggestions made by all contributors, and have decided to add some (on a trial basis) to my repertoire, and decided to forgo others, at least for the time being. Thank you for such an intelligent approach to this aspect of bread-baking.
