Hi Cathy, sometimes when making double batches of yeast bread, we recommend using slightly less than double the yeast (but doubling all the other ingredients). If you want to opt for a slower, more flavorful rise, use about 1 tablespoon plus 1 teaspoon of yeast and watch the dough closely as it rises. Move on to the next step only once it has doubled in size. Happy baking! Kye@KAF
