I just made something like this with mixed berries, except in a small bowl -- it was just me and I wasn't worried about presentation. To make it even more ridiculously easy I used the Milk Bar recipe for pie crumbs, so I didn't have to roll out the crust. I store the filling in the refrigerator and the crumbs at room temperature and just assemble it as needed so it doesn't get soggy (the only problem with that is the crumbs are so good I end up eating them straight out of the bag). I've also made parfaits in dessert glasses with the crumbs and homemade chocolate pudding with whipped cream, and ones with Milk Bar's liquid cheesecake recipe, plus macerated strawberries and some graham cracker crumbles that I improvised. I love the little jars, so cute. I'll keep this in mind for future use when I want something special.
