Very helpful information here, thank you. I make gingerbread tiles every year for Christmas. A few family members were just diagnosed with diabetes and would be better able to eat the tiles if they were made with whole wheat flour. I think the flavor would be fine with white whole wheat, but would I be able to use my showstopper Springerle rolling pin? Will the dough hold its shape?
