Exactly what I am looking for as I prepare to start my Christmas cookies! I am incorporating whole grains into my cookies this year and am still trying to learn what substitutions can be made. I would like to use some barley flour and oat flour in addition to some of the interesting grains I have, I made some oatmeal raisin today using half an flour and half barley flour, with freshly flaked oats. They were delicious.
