Thank you for this article and the many others of yours I have read. I am a few months in on my bread baking after receiving sourdough starter from family member. I was wanting to do more exploring with wheat flours and this answered a lot of my questions. I have been reluctant to vary any recipe but now feel much more comfortable about "playing around". Luckily my husband enjoys the results even if they aren't perfect. You do an amazing amount of options.... !!
