Thank you for this information. I am novice to baking bread. My first couple of times was with KAF organic AP and it was a success, so that is the only flour I use for my bread baking. I really want to try the white whole white to increase the health factor of my basic white bread recipe and was very nervous it would be a disaster. But this blog information on how to go about the process of incorporating the white whole white is very encouraging and I can't wait to try it out in my Christmas bread baking.
