Thank you for this in depth post. I read it this weekend and then had the hardest time finding it again. I've bookmarked it for future reference. I have just purchased a grain mill and am trying to transition to using whole grains in my recipes. My first try was delicious, but did not rise well. I know I added too much flour. I was using the weight for bread flour, not whole wheat. I did use hard white wheat berries and found the taste to be delicious. I'll give it another try this weekend with your excellent tips including letting it rest before kneading and adding more water.
