So, I was looking for a recipe for whole wheat brioche and I could not find one that was set up for bread machines. Using these two bread machine recipes: Brioche 3lb. ½ cup skim milk 4 eggs 1 cup butter 2 tsp. salt ½ cup white sugar 4 ½ cups all-purpose flour 4 tsp. instant yeast Honey Whole Wheat 3lb. 2 ¼ cups water 6 cups whole wheat flour ¾ cup vital wheat gluten ½ cup honey 3 tsp. table salt 3 tblsp. Butter 2 1/2 tsp. instant yeast I came up with this: Honey Whole Wheat Brioche 3lb. 3 ¾ tablespoons water ½ cup milk 4 eggs 1 cup butter 2 tsp. salt 1/2 cup honey 4 ½ cups whole wheat flour 3 tablespoons vital wheat gluten 1 7/8 tsp. instant yeast Did I get the amount of yeast, gluten, and water right?
