Excellent article! My wife pointed me to this article and since it's so long, it took me a while to decide to read it. Now that I have, I'm so glad I did. My son is a Johnson & Wales graduate with a Bachelor's in Baking & Pastry and worked at Bouchon Bakery in Napa, CA (Head Baker before he left). He's taught me how to bake at home. Many times he's suggested substituting wheat to make healthier bread but I'm intimidated! THis article helped me a lot and I will try some of this now, with his guidance.
