Loved this article! My favorite 100% wheat hack is baking bread loaves in parchment lined graniteware chicken roasters instead of loaf pans (Bonus--the pans are inexpensive). Before popping on the lid, spritz the risen loaf liberally with water. Because the bread steam bakes, the crusts are thin and crackly instead of thick, tough, or bitter and the crumb is soft and chewy.
