A very interesting article. In India we normally eat whole grain wheat flour, for making flat breads, we call them Chapatties. I love to bake breads & experiment a lot with it.My grand children love to eat foccacia as I make it. I call it indianisation of Italian bread. In the dough I add finally chopped 1/2 green chillies(depending on the quantity of the flour) 2/3 chopped basil leaves, 2/3 fresh green cloves of garlic a 2 inch piece of celery .I had tried 50/50 method of whole wheat flour & all purpose flour. The results were quite good. While adding water i do not measure it, I go by the feel of it.As for making chapatties, we have to knead flour every day, so we do get a good idea of how much water is needed, for soft chapatties also we need a very soft & pliable dough.I use the same logic while making bread. Your article is very enlightening. Thanks a lot for it.I will definitely try to make a 100% whole wheat bread.U.R.
