Sherri, you'll probably have to make adjustments once you try it anyway; but putting dough in the freezer dries it out, so be generous with your liquid - err on the side of a sticky dough. Don't freeze for longer than 4 weeks before using; and don't let it rise at all once you've shaped it, pop it right into double plastic bags and freeze it (I assume it'll already be in the pan).
