This is the most comprehensive, easiest to understand article on the differences between flours I have ever read. Hugely helpful - thank you very much. And the tip on using orange juice - I can't wait to try that out this weekend! One question - I use whole grain whole wheat flour. (It's darker than regular red whole wheat flour) Would there again be a difference, or can I use it the same as the white ww and red ww you've referenced above?
