I assume this paper is coated with silicone. Does anyone know for certain? I am looking for a source for non-coated parchment, as in days gone by. I cannot find it anywhere. I do not like the silicone coating. For one, it is almost impossible to cook anything "en papillotte" with the silicone coating. You try to make the folds and creases and the whole thing pops apart. This new type of parchment doesn't "breathe" so it just steams the food. Plus,I like brushing parchment with olive oil and with the silicone coating, oil just beads-up.
