When I bake my Christmas cookies, I roll the dough out between sheets of parchment to avoid adding any extra flour to the dough. And it's so handy to cut the shapes and then transfer the cookies to the baking sheet. Also, I have a large wooden cutting board in my kitchen that I use all day, every day, for pretty much everything except meat. So when I want to cut up a batch of caramels, I'll put a sheet of parchment on the board to avoid garlic or onion odors in my candy. I also use it when chopping chilis for hot sauce. I really don't want to infuse my cutting board with capsaicin!
