We leave them right on the baking sheets in the test kitchen; sometimes stacked between them so they stay flat, but we have a couple of rolling racks where it all lives, so that might not be practical. At home I keep parchment sheets in that little bit of space underneath the microwave on the counter, and also on top of the refrigerator; both flat open spaces that aren't doing much else that's constructive.
