Hi! I am on a low fodmap diet for IBS. I cannot have wheat, not because of the gluten but because of the oligos-fructans. I've been making my own bread with KA GF flour but I was dying to make hot dog rolls and hamburger buns. I succeeded by mixing the dough as directed and after the 1st rising putting 2 scoops of dough in each of 6 well greased tunafish cans (6oz). The rest of the dough, I placed in each of the 3 channels of a brownie pan (6 scoops). I flattened the dough with the back of a coffee spoon dipped in warm water. After the 2nd rising I brushed the top of my hamburger & hot dog rolls with egg wash and sprinkled sesame & poppy seeds. I then baked all of them at 350for 25 minutes.
The hot dog rolls need to be cut in the middle so as to have 6. They all came out great!!!
