hi i have a question about the coverture chocolate wafer i use on my bakes. they melt but not into puddles like you see in pictures. and i also notice a 'layer' of 'skin' outside each wafer which can be poked and therafter the melty chocolate will flow out into those puddles observe in photos.

is there a reason why?
