You can do that, Lauren, but we think a paddle/spatula attachment might me messy. If you try the paddle/spatula, we'd suggest keeping it on a low speed. We've also used an immersion blender before, which works well because the tempering process involves agitation. Hope this helps! Mollie@KAF
