I have attempted this the past 2 Christmas, a special add on to my cookie giving. Being one of the messiest cooks on earth this takes the cake! While delicious, homemade marshmallows dipped in tempered chocolate is one the biggest messes I have ever made in over 40 years.
I have tried with different chocolate brands, bars, disks, and I can't say which worked best. One of my problems is knowing how much chocolate I need for a project and it no fun running out and also such a waste of expensive chocolate to have extra. I find there are always fallen or broken pieces of candy that manages to fall in so I don't feel good about trying to retemper left over.
Another thing I'm is still working on is finding the perfect sized and shaped bowl that allows me to dip and coat.
As someone above wrote I also have been making buttercrunch for years. I have always melted the chocolate in the microwave (on stove before microwave) and then simply spread it on one side, put in fridge and flipped, then other side. Problem is it would always need to be refrigerated so it's hard for gift giving and sending to FL through the mail. Next Christmas I will break it into pieces and dip each piece in the tempered chocolate so it won't need to stay cold.
