Just tried this yesterday! I wasn't sure how much to melt v. how much to seed with (I had two pounds total of the Guittard wafers), but I melted just over one and seeded with probably half of another and it worked out great! I ran the dehumidifier in the kitchen to be on the safe side. The first couple of dips the chocolate must not have been in temper just yet, but then it cooled enough for beautiful results. I dipped dried fruit, cashews, and peppermint marshmallows. If I do this again I'm getting a candy thermometer--my thermapen kept turning itself off at the most inconvenient intervals.
