Previous batches always turned out much like Char Rod described, losing their structure in the bath and eventually resembling a pretzel cookie rather than a bite. (Still delicious though.) In my case, I think 2 things might have contributed to this: not enough kneading, and also I had made a biga the night before to use in the recipe, which (I think) made the dough a little more slack than it should have been.
I made them again this afternoon, kneading longer and adding a little more flour, and they came out beautiful!
