Wonderful article and so helpful. Do you have information on how to add cocao powder to a non-chocolate cake recipe? I am really interested in how to turn my favorite vanilla bundt cake into a rich chocolate bundt cake. I know that cocao is not a subsitute for flour, so how do I determine what ratio to use and how do I adjust leavening and acidity in the recipe?
