I'm left with one question, however: I read that alkalizing significantly reduces the health benefits of cocoa. (See for example healthline.com/nutrition/cocoa-powder-nutrition-benefits and pubmed.ncbi.nlm.nih.gov/18710243/.) This was disappointing, as I absolutely love KAF black cocoa powder for both taste and color. What do you know about this?
