Wow! Thank you for all of this information. I did purchase a darker cocoa the last time and when I made my brownies, I could taste a difference. They just tasted more flat if that makes since. My husband couldn’t tell the difference, but I’m now making the same recipe and adding a little baking powder to see if that helps.
