This was the best and most informative article on cocoa that I have ever read. It was an education. Thank you!!! I would like to share my iced cocoa recipe with you: I make a paste of cocoa and water or milk, then dilute further so it is still thick but pourable. I fill a highball glass with ice cubes, add milk almost to the top, leaving about 2" for the cocoa mixture. Pour the cocoa in, until the glass is almost full. Top with whipped cream and serve. Whipped cream is optional. I use dutched cocoa because it is sweeter. The cocoa is so delicious that I love it unsweetened, and the whipped cream has a little sweetness. The cafe that used to serve this let the customers put their own sugar in. If you know you want it sweet, then mix the sugar in when making the paste. Enjoy!!
