Hi Ricky, our general rule is that you can reduce the sugar in a recipe by up to 50% at most. Keep in mind that sugar, or in this case honey, not only provides sweetness for a recipe, but it also adds moisture. When reducing the honey, feel free to add a few tsp of additional water if your dough seems at all dry during kneading. Hope this helps!
