Hi Bob, this sounds like a case of measuring rather generous cups of flour, which can end up adding a lot of extra flour to the recipe. For our flours and recipes we recommend either measuring your flour by weight, or using this method to measure your flour by cups. Using a lighter hand when measuring your flour should go a long way to improving the texture of your dough, but if need be you can certainly add a bit more liquid. Your goal is to achieve a soft, supple dough.
