I have tried to make this dough 3-4 times, each time it comes out thick and dense. Not light and fluffy as shown in the pictures. It seems that I am over kneading in my mixer but I keep waiting for it to pull form the sides. Its winter here so I used the greater amount of water, no matter what it was so sticky it stuck to anything it touched. Any suggestions to what I'm doing wrong? I don't have any issues with white breads but whole wheats have been a nightmare for me. thanks!
