Jessie, I have a Wolf electric oven. I love to use convection when I bake. Keeps the temperature even in the entire oven space. But I have found it to work best when I decrease the oven temperature by 25F degrees from what is recommended in the recipe. This works great for me. You might want to try it at that level and see how your bread does. Every oven is different and you might need to decrease it a bit more or increase it a bit just to get the preferred results in YOUR oven. Hope this helps.
