In both our test kitchen and The Baking Education Center here at King Arthur, we use the KitchenAid Pro line model that we sell through the catalog. It does a pretty good job with really any kind of bread dough I have found, so I would definitely recommend looking into that model and seeing if it might be what you're looking for. Happy Baking!
