And a happy New Year to you, too - thanks so much for your wide-ranging thoughts about one of my very favorite foods. To answer your question, the pizza crust mix includes soft Italian-style flour, semolina and seasonings; the pizza blend is high-protein durum and all-purpose flours with a touch of dough conditioner and baking powder. So they're actually quite different; the blend doesn't include semolina, which gives crust that very slight gritty/crunchy quality. Cheers - PJH
