Hi Louise, we always recommend doing what works best for you, so by all means stick to lard or Crisco! We don't think butter crusts are inherently tough, but if you found the butter crust more challenging to form and roll out, this might have resulted in more handling and more gluten development, which would definitely contribute to a tougher crust.
