Hi there! Most white flour when stored in a dark, dry place, will be just fine in the summer months. Because the bran is removed there are fewer natural oils to oxidize than in whole wheat or whole grain flour. For tips on storing whole grains which can oxidize quickly in warm, humid weather, check out our The best way to store whole grains blog article. We hope this helps and happy baking!
