My only problem with using shortening is the trans fat - Hydrogenated oils are very bad for you - so I will stick with butter. Lately I have been using a hybrid butter/canola oil from Land o' lakes - It does a pretty good job and contains less cholesterol than real butter. The pastry flour from King Arthur and their recipe on the back of the bag are both just great!
