My late father made the most wonderful pie crust in the world. Tender and flavorful. All he ever did was dump flour, crisco, and a little water in a bowl and mix. Rolled it out, put it in a pie plate and filled. Never chilled anything. never let it rest, never used pie weights, food processers or pastry blenders but always ended up with a pie that was incredible. I watched and tried to learn but NEVER got it right. I am a pretty good baker except for pie dough. I now go through all the correct procedures but still do not get the results dad got. I think alot of it is in the feel of the dough and even at 68 years old I have hope that someday I will get it right.
