With all the great info from P J Hamel and respondents, I was dissapointed that no mention was made of a problem I've had for seveal years: the pumpkin mixture doesn't adhere to the crust wall, so as soon as a pie slice is placed on a serving plate the crust wall falls down onto the plate. Alas, I usually use use commercial rolled refrigerated crusts or the Pet Ritz frozen ones. Since in olden times I didn't have the problem I suspect the problem began when refrigerated crusts went from folded to rolled.
