Absolutely LOVED your pie knowledge-I've been baking and competing in pie contests for many years- your information is excellent-I especially liked your experiment with different fats- I must also mention I'm a Registered Dietitian and have tried ALL combinations of fats in pursuit of what I would call a "Nutrition-Friendly" pie crust. I must admit, I use mostly butter but must use some shortening for flakiness( I found Land O Lakes Butter and Crisco are the gold standard for me) Please keep up the great work because we can benefit from a little "Pie-ology" !!
