Sounds like there's some trapped air there that's expanding once the pie hits the heat of the oven creating that pocket! This may be a good opportunity to call our baker's hotline at 855-371-2253 - we'll ask questions like oven temp, if this happens with other fillings, pie crust recipe, and what the pumpkin filling includes.
