Hi Carol! You certainly can make a cookie or graham cracker crust for a chocolate cream pie. As for freezing, we do not recommend that. Unfortunately, custard/cream based pies do not freeze well. When they thaw the texture can be compromised and they may get a bit soggy and soft.
