Hi, Marilyn. After straining your filling we suggest placing plastic wrap or buttered parchment paper on the surface to prevent a skin from forming. It would probably be a good idea to cover the pie while it is in the fridge if there are other food items that have strong smells in there too. Happy baking! Morgan@KAF
