Thanks for reaching out Philip! If you are getting dry baked goods, it could be due to the way that you measure your flour. Do you measure in cups, or by weight? If you are measuring your ingredients by cups, then it is tricky to get the right amount of flour into the recipe. Everyone measures a cup of flour differently depending on how compact the flour is and every cup a single baker measures will have some variations as well. This means that weighing flour is always the most exact way to measure. If you do not have a scale, we've posted a great video on our website that shows our preferred method for measuring flour for our recipes: How To Measure Flour. As to the rules and the recipe selection for the contest. These contests are run by the folks at your State Fair and we don't have any hand in setting those rules or selecting a recipe so you'd want to reach out to them for clarification.
